Braised Kale with Bacon

Ingredients

 

2 bacon slices

1 1/4 cups thinly sliced onion

1 lb chopped kale

1/3 cup apple juice

1 1/2 tablespoons apple cider vinegar

1 1/2 cups diced Granny Smith apple

1/2 teaspoon salt

1/4 teaspoon freshly ground pepper

 

Method

 

1. Place a Dutch oven over medium heat.

 

2. Add bacon; cook until crisp, stirring occasionally.

 

3. Remove bacon from pan, reserving 1 teaspoon drippings in pan.

 

4. Crumble bacon, and set aside.

 

5. Increase heat, add onions to pan and cook 5 minutes or until tender, stirring occasionally.

 

6. Add kale, and cook 5 minutes or until wilted, stirring frequently.

 

7. Add apple juice and vinegar; cover and cook 10 minutes, stirring occasionally.

 

8. Add apple, salt, and pepper; cook 5 minutes or until apple is tender, stirring occasionally.

 

9. Sprinkle with bacon.

 

The dish is a suitable side for roast chicken or pork.

 

Makes 4 servings.
