Chicken or Beef Roti



Ingredients

2lbs chicken or beef (cut into bite size pieces and seasoned overnight)

3 or 4 large potatoes (diced)

2 tablespoons oil

1 large onion chopped

3 garlic cloves minced

Parsley, celery

seasoning pepper or any other seasoning

1 teaspoon paprika

2 tablespoons curry

2 cups chicken broth or water

3 or 4 roti shells

Method

 

1. In hot oil, sauté onions, garlic and other seasonings and curry powder, until tender.

 

2. Add chicken pieces, salt, pepper and paprika.

 

3. Allow chicken or beef to stew on low heat for 10-15 minutes without water added as yet, or until half-way cooked.

 

4. Add diced potatoes and keep pan covered so that potatoes will begin cooking.

 

5. Add 2 cups of water or chicken broth then bring to a boil.

 

6. Simmer, cover pan, for about 20 minutes or until chicken or beef is tender.

 

7. Serve wrapped in a warm Roti shell.
