Coconut Cream Jelly

Ingredients
1 large coconut
1 tbsp powdered gelatin
½ cup milk
½ tin condensed milk

Method

1. Punch a hole in one of the round holes at the head of the coconut and pour out the water.
2. Shell the coconut, wash and peel the flesh.
3. Grate and place in a bowl covered by the coconut water and the ½ cup of milk.
4. Soak for about 30 minutes and then squeeze through a double piece of muslin.
5. Place the gelatin in the coconut cream in a pan and soak for five minutes.
6. Add a low heat slowly, stirring constantly until the gelatin is dissolved.
7. Do not bring to boil.
8. When hot remove from heat, but continue stirring until the gelatin is totally dissolved.
9. Add the condensed milk and stir.
10. Pour in a glass bowl and refrigerate to set.
