Coconut Pie


Ingredients

1/2 cup butter
2 cups flour
3/4 cup sugar (white or brown)
1 teaspoon baking powder
3 tablespoons water

Filling

1 coconut
1 cup brown sugar
1 cup water


The Method

1. Mix dry ingredients with butter until mixture is crumbly, then add water.

2. Dough should be slightly sticky.

3. Part into nine-inch pie pan reserving enough dough to make a lattice work top.

4. Grate coconut (coarsely) into a pot, add sugar and water and heat until mixture becomes syrupy. Ground cinnamon, grated nutmeg and ginger can be added to coconut mixture to desire and taste.

5. Pour into crust and make lattice work over the top by rolling out thin strips of reserved dough.

6. Bake at 350 degrees, covered with foil for first 1/2 hour, then uncovered until golden brown and crisp.
