​Coconut Tablet
​
Ingredients
2 cups grated coconut
1 1/2 cups of sugar
1/2 cup of water
2 tsp vanilla extract
1 cinnamon stick
1/4 tsp baking powder
​
The Method
​
1. Bring water to a boil and add the coconut and cinnamon stick.
​
2. Cook for 5- 10 minutes and add sugar.
​
3. Stir constantly and cook for additional 25 minutes until coconut hardens.
​
4. Remove from heat and add remaining ingredients.
​
5. Remove cinnamon stick.
​
6. Place spoonfuls on a plate or wax sheet and allow to cool and harden.
