​Coleslaw

Ingredients



½ head of a cabbage
1 large carrot
2 cloves garlic (crushed)
1 lime
a handful of raisins
½  cup mayonnaise


Method:



1. Wash the cabbage and the carrot.


2. Shred cabbage finely.


3. Peel and grate the carrot.


4. Mix together with raisins in a salad bowl.


5. Add crushed garlic, juice of lime and mayonnaise. Mix.



6. Chill before serving.



Try substituing the cabbage for grated raw sweet potatoes.  Add lime juice to the grated sweet potatoes to prevent darkening.
