Cornmeal Muffins
Ingredients
¾ cup cornmeal
1/1/4 cup flour
2 tsp baking powder
4 tbsp. Shortening
1 egg
2 tbsp sugar
¾ cup milk of water
Method
1. Preheat oven to 400° F.
2. Sift the dry ingredients.
3. Melt the shortening.
4. In a separate bowl, beat the egg and add the shortening and milk to it. Mix.
5. Add this mixture to the dry ingredients and stir.
6. Grease muffin pans and pour the batter in them about two-thirds full. This allows for rising of the muffin.
7. Bake muffins for 15-20 minutes.
