Cornmeal Pone

Ingredients


¼ lb peeled pumpkin
1 dry coconut
2 tbsp shortening
4 tbsp sugar
1 cup cornmeal
½  tsp ground cinnamon
¼ tsp  ground nutmeg



Method


1. Preheat the oven to 350 F


​

2. Extract the water from the coconut.


3. Extract the coconut flesh and blend to make coconut milk.


4. Grate the pumpkin.


5. Add the cornmeal, shortening, spices, and sugar to the pumpkin.


6. Mix to a stiff batter with the coconut milk.

 

7. Put in a greased baking dish and bake until brown.
