Crab Back

Ingredients
​
12 live crabs
1/2 lime
1/2 onion, finely chopped
1 sweet pepper chopped
1/4 cup butter
3 sprigs chives
salt and pepper to taste
breadcrumbs

The Method
​
​1. Place water and salt in a pot and bring to boil.
2. Drop live crabs in to the water and allow to cook for 10 minutes.

3. Throw the water away, wash the crabs add more water and salt in the pot and cook for 30 minutes.
​
4. Drain water and allow to cool enough for handling.
​​
5. Break off the claws and remove the shell. Take out the spongy fibers and the black sac.
​
6. Turn the crabs over and remove the small loose shell.
​
7. Crack the claws and remove the meat.
​
8. Remove the meat from the shell.
​
9. Vigorously scrub the shells until clean.
​
10. Saute the onion, chives, sweet pepper in the butter.
​
11. Add the lime juice, salt and pepper to taste and the crab meat.
​
12. Place the crab mixture in the shells and sprinkle with breadcrumbs.
​
13. Place under an oven grill to brown.
