Curried Goat
​
Ingredients
​
2 lbs goat meat
3 onions
parsley
celery
thyme
2 garlic cloves
2 bay leaves
salt to taste
1/2 lb potatoes
2 tbsp curry powder
2 tbsp tomato ketchup
1 tbsp fat (butter)
1 lime

 


The Method
​
1. Clean and rinse goat meat, cut into bite size pieces and place into a large bowl of water. Squeeze the juice a lime into the bowl with the goat meat and set aside for 30 minutes.

2. Throw out the lime water and rinse the goat meat.
​
3. Season with salt, ketcup, garlic, herbs and onions.
​

 

4. Fry lightly in fat (butter) in a large pot.
​
5. Add curry and simmer in water until meat is nearly tender approximately 1 1/2 hours.
​

 

6. Dice  potatoes and add to pot.
​
7. Continue cooking unit meat and potatoes are both tender. Stir occasionally and check that the liquid does not evaporate completely. Add a little water if needed.

8. Serve with rice or roti bread.
