Ingredients

​​

 

​8 coconuts (grated)

4 cups cane sugar

1 tbsp grated ginger

2 tbsp vanilla essence

8 tbsp green grated lime skin

 

 



 

​Method



1. In a pot, add grated coconut, ginger, vanilla essence half of the syrup and the lime skin.



 

2. Put on medium heat and stir until well blended.



3. Gradually pour the remainder of the syrup whilst stirring the mixture continuously.



4. When the mixture leaves the side of the pot easily, remove it from the heat.



5. Place spoonfuls on a greased sheet.



6. Allow to cool and harden.
