Greenfig & Saltfish

Ingredients
​
2 lb of green figs 
2 sprigs celery chopped
2 sprigs parsley chopped
3 cloves of garlic
I small onion chopped
4 seasoning peppers chopped
1 lb of salt fish
1/8 cup vegetable oil
​
The Method
 
1. Wash the skin of the green bananas, cut the ends and slice in half and place them in a pan of warm water. (You may also wish to remove the skin before cooking. The best way to do this is to  to remove the skin underwater and be sure to oil your hands before undertaking this process.)​

2. Add salt  to the water.

3. Cover the pan and let it boil until bananas are tender and soft.
​
4. Boil saltfish in water to remove excess salt. Remove salt fish from water and place it in a container of cool water. Once salt fish is cooled down, remove skin and bones and shred it.
​
5. Take a medium sized frying pan and put the vegetable oil and saute the celery, parsley, onion, garlic and peppers in the pan of warm oil.
​
6. Ensure that all the seasoning is covered in the hot oil. Stir continuously for approximately two (2) minutes then add salt fish and mix them together in the frying pan.
​
7. Remove the bananas from the water, remove the skin and chop a few onto a plate.
​
8. Place the stewed salt fish on top.
​
9. Serve Warm.
​
