




Greenfig & Saltfish Pie

Ingredients
​
2 lbs. green figs
1 lb. saltfish
½ lb cheese
1 tbsp. lime juice
2 sweet peppers, chopped
2 tomatoes, chopped
1 onion sliced
1 clove garlic
½ tsp. black pepper
milk
oil

The Method
​
1. Boil the green figs until tender.
​
2. Peel and crush figs with a potato masher while still hot and sprinkle with lime juice to prevent darkening. Add milk and ½ of the cheese. Consistency should be as thick and not too creamy.

3. Boil the fish in water to remove most of the salt. Remove the skin and bones; shred fish.

4. Saute tomatoes, onions, garlic, sweet peepers, black pepper and saltfish in a pan.
​
5. Press half of the crushed fig in a greased baking pie dish. Sprinkle ½ of shredded fish on the fig. Repeat layer – beginning with green fig and top with grated cheese.

6. Bake in an oven at 180° C, for 30-40 minutes or until the cheese has melted and is golden brown.
