





Grilled Fish

Ingredients
​
8-10 ballyhoo fish (locally known as "balawoo" in creole) or any other fish cutlets available.
2 tbsp grilled seasoning (or a mix of powdered onion, garlic, parsley flakes, black pepper and thyme)
salt to taste
1 lime
For Mango Salsa

1 half-ripe firm mango
1/2 onion, finely chopped
1 fresh tomato, chopped
1 garlic cloves, crushed
1 thyme springs
salt to taste
dash of olive oil

The Method
​
​1. Sprinkle the fish with the grilled seasoning, salt and juice of the lime, turning to coat.
​
2. Set aside to marinate for at least 2 hours.
​
3. Heat grill and cook until the fish flakes when tried with a fork. Turn fish and grill on each side.
​
4.Chop the mango, and add the remaining ingredients to make the salsa.
5. Once cooked serve the fish alongside the salsa.
