Hibiscus Squash
​
Said to sooth sore throats
​
Ingredients
​
30 red hibiscus blossoms
3 quarts water
1 ounce ginger
6 limes
fresh lime wedges
Sugar to taste
​
The Method
​
1. Wash ginger, limes and blossoms.
​
2. Finely grate or pound ginger and place in a large saucepan and cover with one quart of water.
​
​3. Boil for 2 to 3 minutes.
 
4. Add blossoms, remove saucepan from heat and cover.
 
5. Allow to cool and strain liquid into a large jug.
 
6. Juice the limes and add.
 
7. Add 2 quarts of water, lime juice and sugar to taste.
 
8. Serve cold over crushed ice.
 
9. Garnish with lime wedges.
