Homemade Pizza

Ingredients

 

14” Whole Wheat Dough

3/4 cup plus 2 tablespoon lukewarm water

1 package/2 ¼ teaspoon dry yeast

1 teaspoon sugar

1/2 teaspoon salt

1 cup whole wheat flour

1 cup all purpose flour

2 tablespoon cornmeal

3 tablespoons olive oil

Additional cornmeal for dusting

 

Pizza Sauce

1 1/2 cup cherry / regular tomatoes chopped 2 tablespoon tomato paste

8 fresh basil leaves

1/4 teaspoon salt

2 teaspoons fresh or dried oregano

1/2 teaspoon dried basil

1/2 teaspoon freshly ground pepper

Pizza Topping

5 ounces chopped kale

1/4 cup grated cheddar cheese.

1 cup shredded mozzarella cheese

 

Method -Making the Dough

 

1. Stir water, yeast, sugar and salt in a large bowl. Let stand for about 5 minutes or until yeast has been dissolved.

2. Stir in whole wheat flour, all purpose flour and cornmeal until dough begins to come together.

3. Turn the dough onto a lightly floured surface. Knead for about 10 minutes until smooth to form a ball.

4. Place the dough in an oiled bowl using the olive oil and turn to coat. 

5. Cover with a clean kitchen towel, and set aside in a warm draft free place, to rise for about 1 hour or until the dough is doubled in size.

 

Method- Making the Pizza Sauce

Using a food processor blend all ingredients together until smooth.

 

Method- Baking

 

1. Heat oven to 400 degrees F. Dust a baking sheet with the remaining cornmeal.

2. Turn dough onto a lightly floured surface. Dust the top with additional cornmeal, using your fingertips shape into a thick flattened circle, then use a rolling pin to roll into a circle about 14 inches in diameter and place on the prepared

baking sheet..

3. Brush the surface of the dough with olive oil, spoon the pizza sauce on the dough and sprinkle with grated cheese.

4. Add chopped Kale and shredded cheese.

5. Bake until the crust is browned and the cheese is golden for 15 – 18 minutes.

 

Note: Additional toppings such as Mushrooms, Tuna, Pineapple, Red and Yellow Peppers, Corn, Tomato, Olives, Spinach etc can be added to your Kale Pizza.
