Lime Meringue Pie

Ingredients

​

1/2 cup lime juice
1 3/4  cups Sugar

6 tbsp. flour

1 cup water

3 eggs

3 tbsp. margarine

a pinch of salt

9 inch baked pie shell

green colouring

The Method


1. Preheat the oven to 350 F .


2. Mix the flour, sugar and salt into a smooth paste with a little water, gradually adding the remaining water and lime juice.


3. Add a little green coloring to tint.

 Place the mixture in a double boiler second pot and cook until thick.

5. Beat the egg yolks in a separate bowl and gradually add them the mixture to them a little at a time; stirring continuously.


6. Pour this mixture back into the pan and cook over the hot water for about 7 minutes.

7. Add the margarine and pour into the pie shell.

​

 

8. Beat the egg whites until stiff and dry, add three tablespoons of sugar gradually.

​

11. Pile on to the pie and bake until delicately brown.
