Mango Cheese
 

Ingredients


Ripe but firm mangoes, not over-ripe
¾ cup sugar to each cup of pulp
½ tsp lime juice to each cup of pulp



 

Method


1. Grease a shallow dish and set it aside.


2. Wash, peel and slice the mangoes.


3. Puree the flesh.


4. Add the sugar and the lime juice.


5. Place the mixture in a thick pan and boil, stirring constantly until the mixture leaves the sides.


6. Test a little in cold water, it is ready when it forms into a ball.


7. Pour in the mixture into the greased shallow dish to a depth of about 1 inch, and allow it to cool.


8. Once cool, cut into cubes and roll in white sugar.
