Marinated Breadfruit 

Ingredients

1 breadfruit

2 cucumbers

half of an onion (chopped)

chives

1 crushed garlic

4 limes

3 cups water

1 cup shredded and cooked smoked herring

1 tbsp. salt 

 

The Method


1. Wash breadfruit and cut in four.


2. Place in a pot of water and boil until each part is tender.

3. Allow to cool and then slice.

4. Slice the cucumbers and add to the breadfruit.

5. In a bowl, add water, the juice of the limes onions, garlic, chives and salt.

6. Pour it over the breadfruit and allow to marinate in the fridge for several hours.

7. Just before serving drain the excess liquid if any and add the smoked herring.
