Mock Fish



Ingredients


1 lb yellow split peas
1 ½ tsp salt
½  tsp cayenne pepper
1 tbsp green seasoning
1 tsp lime juice
3-6 large dasheen leaves



Method



 

1. Soak peas for 4 hours until it is doubled in size.

2. Drain excess water off and grind peas in a food processor or blender.


3. Add all other ingredients and mix thoroughly until well combined.


4. Wash dasheen leaves and dry them.


5. Gently spoon 1/3 of the peas mixture into the middle of the leaf and wrap it like you would a roti. (If all is not contained wrap in another leaf. Continue this process until all the peas mixture is finished.)


6. Place the wraps in a steamer and steam in a pot of hot water. (Be careful not to let the water rise to the wraps.)

7. Steam for 45 minutes to an hour or until it is hard to the touch and no longer soft.


8. Remove from pot and cool for 15 minutes.


9. Slice into fish-like fillet cutlets.


10. If frying: Coat with flour and fry as you would fish.


11. If grilling: Drizzle with olive oil and grill.

12.Cool and serve with favorite sauce.
