Oh Honey, Carrot Cake
Ingredients
2 cups flour
2 tsp salt
2 tsp baking soda
3 tsp ground cinnamon
½ tsp ground cloves
1 cup honey
1 cup vegetable oil
4 large eggs
2 cup carrots, grated
Cream Cheese Frosting
2⁄3 cup butter
1⁄4 cup honey (more or less to desired taste)
16 oz cream cheese
1 tsp vanilla
Method
1. Preheat oven to 350 degrees.
2. Grease a cake pan.
3. Remove the butter and cream cheese from the fridge.
4. Sift the flour, salt, baking soda and spices.
5. In a separate bowl and using a whisk beat the honey and oil until they are well blended.
6. Add the eggs, one at a time and mix until each is incorporated into the mixture.
7. Add the sifted flour to the mixture and stir. Mix until well blended.
8. Add the carrots and mix.
9. Place in the greased cake pan and bake for about 30 minutes at 177 degrees Celsius or until a skewer comes out clean when it is inserted.
10. Remove from the oven.
11. Allow to cool for 10 minutes and then turn over onto a cake rack.
12. Allow to cool completely.
13. Using a whisk mix the butter and one half of the honey until smooth.
14. Add cream cheese and vanilla. Mix well.
15. Taste and add more honey as you desire.
16. Frost the cake with the cream cheese icing.
