Penmi
Ingredients
3 cups cornmeal
1 ½ cup grated coconut
1 ½ cup sugar
½ cup evaporated milk or water
2 tablespoons cooking oil
½ teaspoon powdered cinnamon
1 cup grated pumpkin
4 tablespoons shortening
¼ teaspoon ground nutmeg
Banana or plantain leaves
Twine for tying
½ cup dried fruit (optional)

Method
1. Add the cornmeal, grated coconut, sugar, powdered cinnamon, nutmeg, grated pumpkin and mix thoroughly.

2. Mix into a thick dough, using milk or water. A little more cornmeal may be added, if the mixture turns out to be too soft.
3. Wash and dry banana leaves.

4. Cut away main stem and cut into 6 inch squares.

5. Place a spoonful of the mixture on each square and tie into parcels.

6. Cook in boiling water for about 50 minutes.

7. Take out of water and drain.

8. Serve warm or cold.

For a savoury penmi, try substituting the pumpkin for yam; the sugar, spice and dried fruit for minced meat and black pepper.​
