Pigeon Pea Fritters

Ingredients
​
2 cups pigeon peas
2 cups pumpkin
chopped onion
1tbsp. mustard
salt and pepper to taste
seasoning powder to taste
3 cups of vegetable oil
The Method
​
1. Peel the pumpkin and cut in cubes.
​
2. Boil the pigeon peas and pumpkin together until tender.
​
3. Chop or mash until lumpy. (I love the consistency when some of the peas are not mashed and some are.)

4. Add the rest of the ingredients.
5. Heat oil in frying pan.
​
6. Drop spoonfuls of the mixture into frying pan. Turn on each side when golden brown.
​
Try substituting the pigeon peas with any other type of peas for different flavours and consistencies.
