Pumpkin Jam

Ingredients
 

​

9 lb pumpkin
10 lb sugar
4 oranges
3 ½ pints water
1 tsp. citric acid
1 tsp. ginger

Method
 

​

1. Wash the pumpkin, cut in four to six pieces and peel.


2. Remove the seeds and cut in cubes.


3. Put the sugar and water in a pan and boil for ten minutes.


4. Add the pumpkin, ginger, juice of oranges and the citric acid.


5. Boil for approximately two hours or until the jam is set.


6. Pour in jars.
