Seasoned Callaloo / Spinach

Ingredients

 

1lb callaloo

1 large onion, sliced

1 tbsp margarine

¼ cup boiling water

½ tsp salt

 

Method

 

1. Wash and chop callaloo.

2. Fry onion lightly in margarine in a large frying pan.

3. Add boiling water, callaloo and salt.

4. Cover and simmer until tender (about 10 minutes).

 

Serve with chopped either cashew nuts or peanuts, or chopped fresh ginger roots, or sieved egg yolk or grated cheese.

 

 Serving 4-5
