Smoked Herring

Ingredients


4-6 smoked herring fish (bloaters)
2-4 seasoning peppers, chopped

1 onion sliced
1 clove garlic (crushed)
oil

​

The Method

​

1. Boil the smoked herring bloaters in water to remove most of the salt.



2. After about 10 minutes, remove from the heat pour out the water and add fresh water to the pot. 



3. Repeat this process after another 10 minutes or so.  (This is done to ensure excess salt is removed)​

​4. Remove from the stove, pour out the hot water and soak in cool water until cool enough to handle.

​

5. Clean the fish by removing the head belly, and the main bones in the center.

​

6.  Remove the skin. ( The best way to do this is to turn the fish with the skin facing up and peel it away.)

​

7. In a separate bowl, shred the flesh.

​

8. Saute onions, garlic, seasoning peppers,  and herring in a pan for two to five  minutes.

9. Serve with a cold cucumber salad, ground provisions i.e green figs, plantain, breadfruit or bakes.
