Bonbon Mochas (Starch Cakes)

Ingredients
1 lb starch
1lb lard
1-2 tablespoon flour
Almond essence
¾ lb sugar (in thick syrup)
1 egg
Method
1. The starch could be from corn, cassava or
toloman (arrowroot).
2. Crush starch and sift it into a mixing bowl.
3. Add flour.
4. Rub in lard.
5. Whip up the egg white, add essence and fold in. Mix thoroughly.
6. Gradually add thick syrup and prepare a smooth dough / pastry.
7. Roll out into sticks or fingers.
8. Cut into desired shape and thickness.
10. Place on a greased baking sheet.
11. Bake in a moderate oven until dry and crumbly (20-30 minutes).
12. The prongs of a fork or a cross section from the leaf stalk of a green moco-plantain (makabou) leaf can be used to press in a design on the cakes.
13. Cool and store in a covered container.
14. Serve as a special delicacy.
