Stuffed Green Pawpaw

Ingredients

1 green papaw
½ onion sliced or chopped
1 crushed garlic
thyme
green seasoning
olive oil or butter
salt to taste
½ cup cheese (optional)


 

Method

1. Wash the papaw, cut in two and remove the seeds.

2. Place in a pot with water and boil until the flesh of the papaw is tender.  (The best way to tell is by pricking the flesh with a fork).​

3. Once tender pour out any water and allow the papaw to cool enough for handling.

4. Using a spoon carefully, scoop out the pulp of the papaw.

5. Sauté the seasonings in the butter an olive oil.

6. Mix the seasonings with the papaw and add salt to taste.

7. Refill the shells of the papaw with the mixture and sprinkle with cheese.

8. Brown lightly in an oven or under a grill.
 
(The cheese can be substitute for dried breadcrumbs and a dot of butter added on top prior to baking)
