Sweet Potato Cakes

​Ingredients
​
1 1/2 cups mashed sweet potatoes
1 tbsp olive oil
dash of salt
flour to bind

The Method
​
1. Peel the sweet potatoes, cut them in cubes and cook them in boiling water until tender.
​
2. Mash the potatoes and add salt and olive oil.
​
3. Work in as much flour as the potatoes will take to make a soft but not a sticky dough.
​
4. Roll out thinly and cut in squares.
​
5. Prick them with a fork all over.
​
6. Cook on a stove top grill or in a pan by heating the pan, lightly greasing with with olive oil and adding the cake.
​
7. Allow to brown on each side and lightly grease the pan or griddle after removing each cake.
8. Serve hot.

Try substituting the sweet potatoes for regular potatoes or yams.​
