Tamarind Caramel



Ingredients


3 lbs tamarind (shelled) 

1 lb brown sugar

1 cup water



Method



 

1. Place the water and sugar in a pot, and heat until it boils and begins to bubble. (do not stir)


2. With a spoon take a bit of the syrup and test in water.  It should harden.


3. Dip each tamarind into the syrup mixture, coating it completely. 


4. Allow it to cool on a greased baking sheet or foil.



  • 5. Optional: Sprinkle with salt prior to eating.
