Veggie Stir fry

Ingredients


2 carrots
1 christophene

1 handful of string beans
4 firm half-ripe plantains

thyme
1 onion sliced
1 clove garlic (crushed)

salt to taste
oil

The Method

​

1. Peel and chop the carrots and christophene.

​

2. Cut the ends of the green beans and then cut in two. 



3. Place the carrots, christophene and green beans in a little boiling water and cook until tender.



4. Once tender drain any remaining water.

5. Wash the plantains, cut the ends and cut in half.

​

6. In a separate pot, place in boiling water with salt and cook until tender.  (Put water to boil before inserting the plantain)​

​

7. Drain any excess water and allow to cool enough to allow for handling.

​

8. Remove the skin of the plantain and cut into smaller pieces.

​

9. Saute the onions, garlic, thyme in oil and then add all of the veggies and the plantain.  Season with salt.

​

10. Serve with your favorite sauce. 



We usually prepare this with any of the veggies and ground provisions available.  Get creative, try substitutes like dasheen, yam, breadfruit and sweet potato instead of the plantain.
