Cow Heel Soup

Ingredients
​
1 cow heel
1 crushed garlic clove
1 sprig of celery
1 sprig parsley​
1 cup diced pumpkin
juice of one lime
salt to taste
1 onion chopped
1 lb mixed root vegtables (i.e. yams, tannia, potatoes)
6 cups water

Method

1. Pour boiling water over the cow heel, scrape and clean it when cool.

2. Cut it up into pieces and place it in a pot of boiling salted water. Cook in a pressure cooker or boil until tender.

3. Remove the meat and chop in smaller pieces. Save the water.

4. Add the chopped meat, root vegetables and chopped seasonings to the water.

5. Simmer the vegetables until the vegetables are tender.

6. Add the pumpkin and cook for five minutes or until tender.

7. Before serving, add a few drops of lime juice.
