Ingredients
​
1/2 lemon
2 lbs pork knuckle
1 onion, chopped
hot pepper sauce to taste
1 clove garlic, minced
1 tablespoon lime juice
2 tablespoon white wine vinegar
1 bunch parsley, finely chopped
1 cucumber, grated
2 pints vegetable stock
​
The Method
​
1. Clean and wash the pork knuckle with lemon.
​
2. Place the pork knuckle in a pan, add onions, garlic, chopped pepper and the vegetable stock, bring to boil until tender.
​
3. Remove the cooked pork meat from the broth and cut into pieces.
​
4. Return to the broth and simmer for a further 10 minutes.
​
5. Remove from heat and allow to cool.
​
6. Pour into a mixing bowl, add the cucumber, vinegar and lime juice; mix well together.
​
7. Serve in bowls and garnish by sprinkling the parsley on top.
