Creole Fish
​

 

Ingredients
​
4 cutlets of snapper, king fish or tuna fish
1 tbsp seasoning
1 tbsp lime juice
salt and pepper to taste
seasonings of your choice
flour, for coating
oil, for frying

For Sauce:

1 tbsp vegetable oil
1/2 tbsp butter
1/2 onion, finely chopped
2 fresh tomatoes, peeled and finely chopped
2 garlic cloves, crushed
2 thyme springs
1 1/2 cups  water
1/2 tsp cinnamon
hot pepper sauce to taste
1/4 cup tomato ketchup
4 green and red seasoning pepper, finely chopped
salt
parsley springs, to garnish

The Method
​
​1. Sprinkle the fish with the salt, pepper,  seasonings and lime juice, turning to coat.
​

 

2. Set aside to marinate for at least 2 hours.

3. Place a little flour on a large plate and coat the fish.
​
3. Heat a little oil in a large frying pan and fry the fish for about 5 minutes until golden brown, then set aside.
​

 

4. Heat the oil & butter in a large pan and stir-fry the onion.
​
5. Add tomatoes, garlic, and thyme, stir well and simmer for 5 minutes.
​

 

6. Add water, ketchup, cinnamon and hot pepper sauce.
​
7. Add the fried fish and the chopped peppers.
​

 

8. Simmer until the fish is cooked through, and the water has reduced to a thick sauce.
​
9. Adjust the seasoning with salt.  Serve hot, garnish with parsley.

Tip:

 

The longer you leave the fish to marinate, the better the taste!
