Bakes

Locally these are usually eaten with stewed saltfish, or cheese. Bakes and Cocoa Tea are also a staple in our cuisine. It is an all round any time of the day type of food.

Try it, you are guaranteed to love it!

Ingredients
​
4 cups all purpose flour
2 tablespoon sugar
2 ½ tablespoon baking powder
½ teaspoon salt
1 tablespoon olive oil or butter
Oil for frying
Water

The Method
​
1. Sift flour, sugar, baking powder and salt in a large bowl.
​
2. Add oil or butter and mix thoroughly and adding the water gradually.
​
3. Knead dough until it becomes soft and almost sticky to the touch. Add a little flour to it, if it becomes too sticky and knead until you can touch it without it leaving any dough on your hands.

4. Once you have finished kneading the dough, cover it with a damp towel and allow it to rise for at least 30 minutes.

If Frying:
5. Then place a frying pan on the stove, and allow it heat up, then pour the oil into it.
​
If Roasting:
5. Oil your grill pan with olive oil and heat it up. (I use my George Foreman grill, modern roasting with a smile)
​
6. Cut up dough into small balls and make flat about ½ inches thick. This is best done by hand.
​
7. Place the flat dough in your frying pan of hot oil or on the grill on a medium heat until it has turned golden brown and turn over to the other side for same results.
​
8.If frying, drain excess oil upon removal.
