Greenfig Salad
​
Ingredients
1 lime
2 sweet peppers (chopped)
1 onion (chopped)
1 clove of garlic (crushed)
6 green bananas
1/2 cup saltfish
mayonnaise
salt and pepper to taste

The Method
​
1. Wash the greenfigs, cut the ends, cut in two and give each a horizontal slit.

​
2. Boil in a pot of water, until tender.
​
3. Allow to cool, peel, dice and place in a bowl.
​
4. Add lime to prevent darkening.
​
5. Boil the fish in water to remove most of the salt. The trick is to change the water half way through the cooking process. Remove the skin and bones; shred fish.
​
6. Add prepared onions, garlic, sweet peppers and saltfish and mayonnaise.
